Vegan “Mac Daddy Crunch Wrap”

This is a very Lilith meal. And very easy to assemble.

First make a batch of mac & cheese, vegan of course. Then heat up a veggie burger of your choice- I used Morningstar’s Cheeseburgers, new, and VEGAN! (So glad this company is heading more and more vegan).

Take a large spinach tortilla. Spread some vegan mayo on the inside. Then put in half the veggie burger, 1/4 cup of mac and cheese. Top with diced tomato, shredded lettuce, and 6-7 frito chips. Then put some ketchup on top of this. Wrap it all up and enjoy a packed and tasty burrito!

Super Packed And Crunchy Homemade Veggie Burger

Sorry it’s been a while since I wrote: I worked the last 7 out of 9 days so did not have much time for cooking. I will try to make it up to you with the fact that those things I did cook were phenomenal. Let’s start with this loaded veggie burger. I admit I am lazy when it comes to some things, and in particular I am usually very lazy and reluctant to make my veggie burgers from scratch. I am super glad I did make this one from scratch, but to be honest what really made this burger is the toppings.

Vegan “Salmon” and Spinach Burgers

There is never really any question in my mind that I will be vegan for the rest of my life. But there are some non-vegan things I miss, like in particular seafood. So when browsing veganessentials.com the other week I bought a package of vegan salmon, and then promptly did not know what to do with it…It sat in my fridge for about a week until I found a completely non-vegan recipe using real salmon and veganized it for this meal.
