It’s a tradition for us to cook a couple vegan roasts as well as tons of sides every year for Thanksgiving. This year we did it twice, once for us the day after the holiday, again a couple weeks later when my brother’s family came to visit. And I also had so much leftover mashed potatoes I decided to make a thanksgiving leftover pizza inspired by someone else’s picture of a non vegan version of it last year. It did not disappoint.
