Normally I post pictures and forgot the recipe, but today I am doing to opposite. These are recipes I threw together last minute and forgot to take a picture, and wanted to share. They are the non-vegan equivalent, which I veganized and they were amazing.

The weather has been getting nicer quickly, and it’s staying lighter out later, so we had our first outdoor meal last week! Had a chickpea salad and a pasta, super tasty and fitting for the locale.

Another One Pot Pasta
The truth is: I’m a lazy cook. I know it’s hard to believe with all the posts I have and all the food I cook, but I am always looking for shortcuts or ways to speed up the process or make it easier. This has led to some disasters: like putting a veggie bullion cube directly in the mix of water and other ingredients in the food processor rather than boiling/dissolving in water first, and leading to a graining/disgusting taste to vegan enchiladas once. But this short cut: making recipes of one pot pasta, has not failed me so far, and seems to be working.
Stuffed Potatoes Galore
I’ve been on a bit of a kick with making potatoes lately- either broiled or baked or fried up as breakfast potatoes. I made some variations in stuffed potatoes this week, which was nice for leftovers too since it just involved using the stuffing parts over pasta or chopped/fried potatoes as leftovers. No recipes here, just pictures, but you can probably tell what is in each from the pictures.
Pizza Night
Yup, another vegan pizza night, it’s something I excel at after all.
This time I experimented with some shiitake recipes, super pleased with the results.
Leftover East Side, West Side Chili
Don’t ask about the name, it’s a long story, but this was a super tasty chili that’s great for filling up the freezer with leftovers!
