I was away for 4 days last weekend and working on either end, so we quickly went through our freezer full of leftovers. I had to restock this week and made this lovely casserole for some mexican.
Made an oldie but a goodie, plus a new side dish to share here!
This meal was quite carb heavy was my only complaint. It was all super tasty, but even the Veganaut took one look and exclaimed “Breaded bread?!?! That is so you.”
This was seriously the best quesadilla I have ever made, I think.
Another delicious one here, the innards were enough to make two giant calzones.
This recipe turned in to a combo recipe from previous ones. A little bit of it goes a long way, and it was even better as leftovers.

Found this recipe in a non-vegan quesadilla recipe book. After lots of modifications it turned out quite nice.
So one of my co workers has had a (non-vegan) microwaveable breakfast burrito covered with Hollandaise sauce for breakfast every day this week, and I have to admit, it looked good. But no worries, I would never consider giving up going vegan, so what did I do? Went home and made my own homemade vegan breakfast burrito, and it was better than any I have ever had before, vegan or from my non-vegan days over 12 years ago.
