This is always a classic, and super easy to make.
The weather has been getting nicer quickly, and it’s staying lighter out later, so we had our first outdoor meal last week! Had a chickpea salad and a pasta, super tasty and fitting for the locale.
Can’t share the recipe here as it is not mine to share, but can share some pictures! This is the queso blanco recipe from Isa Does It. I did add some roasted sweet potatoes and vegan chick’n strips to make it a little more me. 🙂

This one was a recipe from Isa Does It. The salad was pretty much exactly according to the recipe in the book, but I made quite a few modifications to the chili so will post my version here.
This was another elaborate meal, not as good as my usual. I might make the lentil loaf again, but probably not the salad.
I’ve never been much of a salad person, but sometimes they can really hit the spot. This one was super simple as I just arranged a bunch of remade stuff together:
Bake some vegan garden lime chipotle chicken wings
slice a package of cherry tomatoes in half.
Buy some pre made vegan corn salsa.
This recipe turned in to a combo recipe from previous ones. A little bit of it goes a long way, and it was even better as leftovers.
I don’t make salads often, but when I do I have a feeling they end up being more calories than my usual meals since they are SO PACKED! Here is a perfect example.
