SOUPS!

Definitely been on a soup kick lately and it seems to be working out for me.

And lastly this was a chick’n and white bean soup that I can’t find the recipe for.

Made some simple chocolate covered pretzels for Christmas, sadly they tasted like poop.

Made this beautiful dish with Asian garlic broccoli, fried tofu, and seared king oyster mushrooms. Sadly, the mushrooms are gross. But the leftovers were salvageable by removing the mushrooms. Also made this chipotle mac and cheese dish subbing almond milk and daiya cheese: https://www.eatingwell.com/recipe/267232/cheesy-chipotle-cauliflower-mac/ Sadly it was really boring and lacking flavor.

Lots of veganizing this winter

Here’s a little dump of recipes with the original and what I subbed to make it vegan.

My husband requested egg nog thumb print cookies for his birthday. I used this recipe: https://www.whitelightsonwednesday.com/eggnog-thumbprint-cookies/

I subbed earth balance for the butter, energ egg for the egg, and it turned out great!

I made a parmesan pasta but used cauliflower, asparagus, and broccolini instead of spinach. Original recipe here: https://www.eatwell101.com/parmesan-spinach-mushroom-pasta-skillet-recipe Obviously used vegan parmesan instead of dairy.

And this was my first attempt at a tortilla pizza using soyrizo, olives, pizza sauce, daiya, and green chiles.
