I know, it might not sound appealing, but this was a great recipe. I had tons of left over oyster mushrooms from our farm, so this is how I used them!
Regardless if you are vegan or not, this is seriously the BEST chili mac in existence.
Used a Vegan Sandwich cook book recipe for this one. Though the pictures look nice, I was not a fan. Took meaty/savory.
The original recipe for this was non-vegan and required tortellini. I did buy vegan ravioli in its place, but had to add penne to fill up the casserole dish since the ravioli was only a tiny amount.
Despite living in San Jose, we only make it up to San Fran a couple times a year. But when we do go we always make a point of stopping at Far West Fungi, usually to purchase a new oyster mushroom farm. Our latest farm produced about 3 cups of shrooms which I used in this great recipe.
This one turned out a lot better than I expected. It’s all about the sauce here.
As you can see I am catching up on posting some of the recipes I made up or tried this month, and I came across these pictures of a soup from earlier in the month. The truth is I have no idea what the recipe was, but I will share the pretty photos, topped with avocado and vegan bacon.
This was a modified non-vegan recipe from Facebook that turned out amazing. The recipe is for two pies, as I brought one to work and kept the other at home.
This is another recipe from the famous Isa Does It cook book.
This was one of my more epic creations, the recipe I made was based on a picture of a burger I saw on instagram. Like many of my burgers, it’s hard to take a bite big enough to get some of all of it, so I made open face versions as leftovers. So freaking good though.
