Sweet potato, corn, and black bean veggie burgers

OMG so good…drool…

Ingredients:IMG_8861

  • 2 sweet potatoes, baked
  • 2 cans black beans, drained
  • 1 bag of frozen corn, thawed
  • 1 cup panko breadcrumbs
  • 2 TBsp garlic
  • 1/2 cup flour
  • 1 jar tomato paste
  • 3 TBsp flax seed mixed with 6 Tbsp water
  • 1.5 TBsp cumin
  • 2 tsp salt
  • olive oil

First bake your sweet potatoes, and mix the flax seed with water in a bowl. While this is cooking place 1 can of black beans, the cumin, salt, and garlic in a food processor and mix. IMG_8863

Once the sweet potatoes are cooked and you can handle touching them, shell all the potato meat out in to a large bowl and chuck the skins. Then add all the remaining ingredients except oil and mix. I found it easiest to use my hands to get it all mixed together, but a mixer would have worked too.

Now this recipe makes probably 8-10 veggie burgers. What did I do? I made 2 for dinner for Aaron and I, and then I made meatballs (falafel like) with the rest and fried them up, then put them in a wrap with some spinach, tomatoes, and a tiny bit of Earth Balance Mac and Cheese. IMG_8862

The burgers were SO SO SO good. For the burgers I did layers of one slice Chao cheese, the burger, some spinach, a tiny bit of Earth Balance make and cheese, avocado slices, and BBQ sauce.
