This was a perfect winter treat!
- 10 TBsp margarine
- 1 cup diced white onion
- 1 cup diced carrots
- 1 TBsp garlic
- 1/2 cup flour
- 2 cups almond milk
- 1 cup soy creamer
- 2 cups veggie broth
- 2 bags daiya cheddar cheese
- 2 bags pre cut broccoli florets
In a small skillet take 2 Tbsp margarine and fry up the carrots, garlic, and onion. Set aside.
Then in a large soup pan melt 8 TBsp margarine, then whisk in the 1/2 cup flour. Once mixed add in the creamer and almond milk, continue to whisk. Then add the veggie broth and bring to a simmer. Next add the broccoli and the previously fried veggies and cook on simmer for 10-15 minutes. Finally add the daiya cheese, turn up the heat to medium, and cook until completely melted in.
