Yup, another vegan pizza night, it’s something I excel at after all.
This time I experimented with some shiitake recipes, super pleased with the results.
- vegan garlic aioli (lots of recipes out there, choice whichever you want)
- 2 cups thinly sliced shiitakes
- daiya cheese, lots of it
- caramelized onions (I make them by cooking in olive oil and once well wilted add in a little town sugar)
- pizza sauce and crust
First layer some sauce on the crust, then top with a thin layer daiya mozzarella. Next top this with the onions and mushrooms. Then another layer of cheddar cheese. Bake at 450 for ten minutes. When cooled out of the oven, drizzle with garlic aioli.

- cremini mushrooms
- silken tofu
- vegan pepperoni slices
- lots of daiya cheese
First spread the sauce over the pizza dough. Then top with a thick layer of spinach. Then daiya mozzarella. Next the pepperoni slices, cremini mushrooms, and balls of silken tofu (pretend it is balls of mozzarella). Lastly top with a thin layer of daiya mozzarella.
Bake at 450 for 12 minutes.
