Another One Pot Pasta

The truth is: I’m a lazy cook. I know it’s hard to believe with all the posts I have and all the food I cook, but I am always looking for shortcuts or ways to speed up the process or make it easier. This has led to some disasters: like putting a veggie bullion cube directly in the mix of water and other ingredients in the food processor rather than boiling/dissolving in water first, and leading to a graining/disgusting taste to vegan enchiladas once. But this short cut: making recipes of one pot pasta, has not failed me so far, and seems to be working.

This one is a chick’n part pasta, super tasty.


  • 2 TBsp garlic
  • dash or two of red pepper flakes
  • 2 cans diced tomatoes
  • 1 can tomato paste
  • 3 cups veggie broth
  • 1 box pasta your choice
  • breaded vegan chick’n, I used boca spicy chick’n burgers pre-cooked and cut in to bite size pieces
  • 2 cups spinach
  • daiya mozzarella

Cook the garlic in some olive oil, then ad the paste and all the spices. Next add the diced tomatoes and broth, bring to a boil, then add the pasta and chick’n, and simmer until most of the liquid is absorbed. Sprinkle in some vegan mozzarella.
