Simple Save the Chickens Salad

I modified this one from the Native Food’s Recipe book a friend lent me.

Basically you use romaine hearts and shredded cabbage as your greens, whatever fake chicken you want (I used Tofurky BBQ Chick’n), frozen corn that’s been boiled, jasmine rice, a chopped red pepper, and I added in some chopped tomatoes too.

For the dressing, I made a vegan honey mustard recipe.
