Potato Nachos

Nacho night is always a hit in our household.

This recipe was super easy and delicious.

First slice up 3-4 potatoes of your favorite type (I’m a sweet potato fan, the Veganaut is a regular potato fan).

Mix the potato slices in a large bowl with 2 Tbsp olive oil, 1tsp garlic powder, 1 tsp paprika, and 1/4 tsp salt. Lay the potatoes flat on a baking sheet and bake at 400 for 20 minutes.

While they were baking I mixed a large bowl of:

1 bag frozen (thawed) corn

1 can drained black beans

1 can drained pinto beans

1 can drained diced tomatoes

1 can drained mild green chiles

1 bag defrosted BEYOND chick’n cut in to small pieces.

When the potatoes are done cooking, top them with this mixture, then top with cheese,  then broil the selection for 5 minutes on high.

Serve with salsa and avocado.
