This one was a recipe I made based on a picture I saw of a non-vegan dish.
- 1 bag pasta
- 1 broccoli head, chopped
- 1 bag spinach
- 1 cauliflower head, chopped
- Pesto (recipe below)
- vegan alfredo sauce (recipe below)
- 1 package lightlife sausage
First put the pasta, broccoli, and cauliflower in one large pot with water and bring to a boil. Cook together until the pasta is done, and at the last minute add the spinach.
Meanwhile fry up the vegan sausage, I fried in long slivers, patted down with paper towels, and then cut in to tiny chunks.
Make your vegan pesto, I used this recipe: http://www.simplyrecipes.com/recipes/fresh_basil_pesto/ Only I subbed the parmesan for vegan parmesan which I had on hand.
For the alfredo sauce, I used this recipe: https://minimalistbaker.com/30-minute-vegan-alfredo-vegan-gf/
Last I put the pasta and veggies in a oiled casserole dish, spread the pesto on top of that, and the alfredo sauce on top of that. I baked at 425 for 20 minutes.
