I’ve been on a bit of a bowl kick, and actually not using the recipes from Vegan Bowl Attack even though I love that book. Here are some of my creations this month:
This top one was purely a good use of leftovers:
Spanish rice, mango salsa, gardein chicken strips, chili pinto beans, and Heidi Ho’s nacho cheese, all topped with some vegan ranch.
I also made another variation of the falafel bowl: this one has jasmine rice and vegan slaw on the bottom, on top of that is some falafel, hummus, and roasted mushrooms and broccoli. Goes well with a little marinara as well.
And last but not least, the gardein BBQ wings bowl. This one has rice, slaw, avocado, and gardein BBQ wings.
