Well we are in New Mexico, only seems appropriate that we try to find a way to include green chiles in most things!
-1 can green chiles
-1 can drained diced tomatoes
-vegan ricotta (I used two types, half on either half of the lasagna- one half was using store bought cashew ricotta from Whole Foods, the other was using home made tofu ricotta- there are tons of recipes to chose from out there on the inter webs).
-1 small jar salsa
-2 packages frozen beyond meat chicken strips
First fry up the chicken strips, then mix them in a large bowl with the tomatoes and green chilis.
Line up a casserole dish:
Bake a 350 for 50 minutes.
