The vegan pre-made grocery section has exploded, and it feels so good. Lately my pantry has been full of lots of extra stuff to just have on hand as needed…Earth Balance has a new mac and cheese box out there that is probably the closest I can remember to the Blue Box.
This was a great recipe full of leftovers.
-two Earth Balance Cheddar Mac and cheese made according to box instructions.
-green chile salsa
-beyond meat chicken
-3 chopped tomatoes
Once the mac and cheese is made, mix it in a large bowl with the tomatoes, sliced vegan chicken, and salsa.
Then line a casserole dish with enchilada sauce on the bottom. Fill each tortilla with the mac and cheese mixture. Roll up and place seem down. Top the enchiladas with the rest of the enchilada sauce. Then whatever leftover mac and cheese mixture you have.
Bake at 350 for 30 minutes.
