Falafel Salad

I recently got the Mediterranean Salad at Veggie Grill and LOVED IT. So I tried to replicate my own version at home.

First I made a vegan simple slaw, and used that as the base of the salad.

On top there was cooked falafel, mushrooms, roasted broccolini. All of this is served with a side of tahiniĀ and spicy tomato sauce.

For the spicy tomato sauce: mix one can of scurried tomatoes with 1 tsp minced garlic, 1/2 tsp salt, 1/2 Tbsp sugar, and a dash of red pepper flakes.

Served best with flat bread!
