Vegan Sweet Potato and Soyrizo Nachos

This was heaven, a recipe that had all of my favorite things.



  • 2 large sweet potatoes, diced
  • one can drained black beans
  • tortilla chips
  • 1 package soyrizo
  • 1 pre made batch of cashew cream (I like Minimalist Baker’s recipe)
  • 1 bag thawed frozen corn
  • 2 tbsp dried parsley
  • avocado

First  baked the diced sweet potatoes with a little ole oil in a casserole dish at 425 of 40 minutes. img_9629

While that is baking, fry the soyrizo and black beans in a little ole oil and set aside. And make your cashew cheese.

Then on a cookie tray spread the chips, top with chips.

In a large bowl mix the cooked sweet potato, corn, black beans, and soyrizo. Then sprinkle this on top of the chips. img_9630

Next spread with the cashew cheese.

Bake at 350 for 5-6 minutes.

Top with parsley and avocado!
