Simple Recipe Week Day 4: Vegan Mac and Cheese Casserole

I didn’t take as many pictures of this as I should have, but it was a quick and easy way to throw together some vegan leftovers!

What did I put in here? Three boxes of Earth Balance Cheddar Mac and Cheese (pre cooked according to the box), 1/2 bag leftover spinach, 1 cup leftover cherry tomatoes, 1 can drained kidney beans, 1 package vegan beetles crumbles, and 1 can drained green chiles.

I topped it all with leftover bread crumbs and baked at 425 for 30 minutes. It makes a great leftover, and is even better is you add a tiny bit of BBQ sauce.
