Vegan One Pot Cheeseburger Mac and Cheese

Another great and simple leftover idea.


  • 1 package TJs vegan beef crumblesIMG_9052
  • 1 box macaroni
  • 1/2 cup chopped onions
  • 1 can black beans, drained
  • 1 can diced tomatoes
  • 1 jar tomato sauce
  • 1 4 oz can of green chile peppers
  • 3 tsp chili powder
  • 1-2 cups water
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 bag Daiya cheddar

    Mix everything except the cheese together in a large soup pot, bring to a boil and then simmer for 20-30 minutes, until the noodles are cooked. IMG_9053Add more water as needed to keep it moist until the noodles are cooked and have absorbed all the water. Once you take it off the burner but before serving, mix in the daiya. I topped with avocado when I served.
