Wow, just wow. Seriously these might win an award some day.
- 3 cups flour
- 1/2 cup cocoa powder
- 2 tsp baking soda
- 1/2 tsp salt
- 2 stick earth balance margarine, softened
- 1.5 cups brown sugar
- 1/2 cup regular sugar
- 1 TBsp flax seed mixed with 2 Tbsp water
- 2 TBsp almond milk
- 1.5 TBsp vanilla
- 3 TBsp red food coloring
- 1 bag vegan white chocolate chips (mine were from veganessentials.com)
Mix together the flour, cocoa powder, baking soda, and salt in a large bowl.
Then mix together the margarine with the sugar in a medium bowl. Once this is combined, add the flax seed, almond milk, and vanilla, then last mix in the food coloring.
Slowly mix the dry and wet ingredients together, then mix in the chips. (works best with an electric mixer). Chill in the fridge at least overnight.
The next day, make small (1.5-2 inch) balls with the dough and place on a greased baking sheet. Bake at 350 for 10-12 minutes.
For added bonus, I had some cream cheese frosting leftover, and I made cookie sandwiches with these and that frosting in the center.
