This is always a classic, and super easy to make.
- 1 bag romaine lettuce
- 1 bag thawed frozen corn
- 1 package of Boca’s spicy chick’n vegan burgers, heated in the microwave and then chopped
- 1 block of daiya jalapeño jack, shredded
- 4 roma tomatoes, diced
- sour cream (tofutti)
- can refried beans
In a large bowl I mixed together all the ingredients except the refried beans, salsa, and sour cream.
Taking my first tostado, I applied a layer of refried beans to the bottom, then a layer of the salad like mixture. Next another tostado with refried beans on top, and then another layer of salsa. Last a topping tostado to make the tower, and top this with salsa and sour cream.
The salad mixture makes for a great leftover salad.
