Regardless if you are vegan or not, this is seriously the BEST chili mac in existence.
- 2 boxes vegan Earth Balance Mac and Cheese, cooked according to instructions on the box
- 4 frozen veggies burgers, cooked in the microwave and cut in to 1 inch chunks (I used boca spicy chick’n)
- 1 bag spinach
- 2 Tbsp chili powder
- 2 cans drained pinto beans
- 1 14.5 ounce can crushed tomatoes
- water as needed
- 1 16oz jar of salsa
- 1 bag thawed frozen corn
Make the mac and cheese according to the box.
Make the chili: Stir all the ingredients together aside from the spinach and mac and cheese. Bring to a boil, then reduce to simmer and let cook 30 minutes, add spinach just before serving and wilt in. Add more water as needed if too thick. Serve over the mac and cheese.
