This was a unique recipe that I really enjoyed making, and loved the leftovers.
- 2 plantains, sliced and fried in small amount of oil
- 1 package of vegan Spanish rice, pre-cooked according to the box
- vegan smart bacon, sliced and pre fried
- 1 can rinsed black beans
- daiya cheddar
- daiya jack
On the bottom tortilla first put the jack cheese. Next some rice on top of that. Then some plantains and bacon. Next some black beans. Lastly some cheddar before the top tortilla.
Cook up in your quesadilla maker.
