Vegan Breakfast Quesadillas

I LOVE LOVE LOVE my new quesadilla maker, makes things so much easier!

Ingredients (to make about 6 quesadillas):IMG_8331

  • 4 chopped roma tomatoes
  • 2 large chopped white potatoes
  • 2 chopped green peppers
  • 1 package chopped smart bacon
  • vegan egg (follow your heart)
  • vegan tofu egg (1 package extra firm tofu mixed with 1/2 tsp turmeric and 1/2 tsp black salt)
  • 1 package daiya mozzarella
  • 1 block shredded daiya jack cheese
  • tortillas
  • olive oil

First I fried up the potatoes, green peppers, and bacon together like a stir fry, then set aside.IMG_8333

I then made two types of egg: one was the new Follow Your Heart Vegan Egg. The other was a bowl of my pre-made mixed tofu egg (see above).

Then assemble:IMG_8338

On top of bottom tortilla put a layer of jack.

Then the veggies and bacon mixture. IMG_8334

Then the egg (one or the other per quesadilla, not both mixed).
Then some tomato.

Lastly top with the mozzarella. Cook in the quesadilla maker. So tasty.

Top with a little salsa at the end.
