Vegan Soyrizo Pasta with Garlic Pull Apart Bread

This was a delicious Italian-esque dinner night for us. The bread rolls were a great added touch.

Rolls:

  • vegan dinner rolls (remade dough)
  • 3 TBsp melted margarine
  • 1 tsp garlic powder
  • 1 TBSp dried parsley flakes
  • 1/2 cup vegan daiya

This was a veganized version of one of those buzzfeed video posts. First cut up all the dinner rolls in to quarters and put in a bowl. Then mix all the remaining ingredients in to that. Spray a cupcake pan with non-stick spray, and put roughly 5-6 pieces of roll in the mixture in each cup. Bake at 375 for 12 minutes.

And make your pasta!

Ingredients:

  • 1 package of bow tie pasta cooked according to instructionIMG_8322
  • 1 package of vegan soyrizo
  • 2 cans diced tomatoes
  • 1 can drained chickpeas
  • 1 TBsp olive oil
  • 1/2 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1 tsp dried basil
  • 1 cup daiya mozzarella
  • 1 bag spinach

Cook the pasta according to instruction.

Heat the oil in a skillet and add the soyrizo. Cook on high for 2-3 minutes. Then add the chickpeas, tomatoes, and spices and cook on medium for 4-5 minutes. Last wilt in the spinach and add the mozzarella. Serve over pasta.
