The green chiles in this really make the dish. So freaking tasty, and even better as a leftover. The pictures do not do it justice, seriously so good!
- 1 quart chipotle salsa
- 1 cup water
- 1 bag tortilla chips
- 1 can drained black beans
- 1 bag thawed frozen corn
- 1 package sliced green onions
- 1 can diced green chiles
- 1 bag daiya cheddar
- 1 bag daiya mozzarella
Bring salsa and one cup water to a simmer in a large skillet. Cook for 8-10 minutes.
In a casserole dish layer the following using 1/2 of everything in two layers:
chips, sauce, green onions, beans, corn, chiles, cheese; repeat.
Bake at 350 for 20-30 minutes.
