Vegan Brunch Casserole

This one was ok, but not the greatest. The veganaut is a huge fan, but me not as much so I probably won’t make it again.

Ingredients:

  • 3 packages uncooked dinner biscuit rolls, make sure vegan (some brands are accidentally vegan)
  • sliced green, red, and yellow bell pepperIMG_7661
  • 1 package small white potatoes, diced
  • 1 package silken tofu
  • 1 package extra firm tofu
  • 1 tsp black sea salt
  • 1 tsp tumeric
  • spinach
  • vegan daiya cheese
  • vegan bac’n

Using a large casserole dish, line the bottom with nonstick spray, then lay out the biscuits on this. Top with the peppers. Then a layer of spinach.

Cook the potatoes in oil in a skillet first. IMG_7662

Mix the two types of tofu along with turmeric and black sea salt in a large bowl. Mix the potatoes, cheese, and bacon in to this bowl.

Pour this mixture on top of the casserole dish.

Bake at 350 for 30 minutes. Scoop out like lasagna!
