Sub Week; Recipe 3

Vegan carnitas!

Ingredients:

  • 2 cans jackfruit in bring, drained
  • 1/2 cup orange juiceIMG_7462
  • 2 Tbsp onion powder
  • 4 Tsp garlic
  • 3 TBsp lime juice
  • 1/4 cup soy sauce
  • 1 TBsp sriracha
  • 1 TBsp cilantro
  • 1 tsp cumin
  • 1 TBsp mirin
  • guacamole
  • sliced roma tomatoes

This recipe is all about the jackfruit. First bring the jackfruit, orange juice, onion powder, garlic, lime juice, soy sauce, sriracha, cilantro, cumin, and mirin to a boil in a pot- once all the ingredients are in place you will have to add some water to bring the liquid level up above the jackfruit. Bring to a boil, then reduce to simmer and leave for one hour, stirring occasionally. IMG_7461

Move all of this in to a large tupperware container after the hour is up and place in the fridge overnight.

The next day, drain the jackfruit, and place in a skillet with the olive oil and cook until the jackfruit starts to brown. Add 2 Tbsp lime juice and 2 Tbsp soy sauce to this. IMG_7464

Spread guac on the bottom of your sub, then a layer of sliced tomatoes, then a heaping of jackfruit. On the top bun spread the chipotle mayo. So. Freaking. Good.
