After making lobster rolls I had some leftover sub rolls and decided to throw this last minute recipe together.
Super easy- just sautee some mushrooms and spinach with olive oil with a tiny bit of garlic. Make some grain chick’n fingers. Assemble on the sub as chick’n, mushroom and spinach mixture, marinara, and daiya cheese. Pop in the over at 425 for 5 minutes after assembled to melt the cheese and toast the subs.
