Mushroom and Tofu Pasta



This is a nice simple recipe for when you need a break from all the rich foods I normally make.


  • 1 box fearful, cooked
  • 1 bunch of asparagus, chopped
  • olive oil
  • 1 package of teriyaki tofu (from TJs) cut in to cubes
  • salt
  • 1 bag white mushrooms
  • 1 tsp thyme
  • 3 TBsp garlic
  • 1 cup white cooking wine
  • 1/2 cup daiya mozzarella
  • 1/4 cup vegan parmesanIMG_7390

Cook the pasta and set aside in a large bowl.

In a skillet heat the olive oil and garlic over medium heat. Add in the tofu and cook for 5 minutes. Then add in the salt, mushrooms, asparagus, and thyme and cook another 5 minutes. Add the cooking wine and bring to a boil and cook until most of the liquid is gone.

Mix in with the pasta and cheese. Enjoy!
