We love mushrooms in our household. And we had this whole cluster of oyster mushrooms from our at home oyster mushroom farm to cook with!! I made two different types of tacos, both phenomenal.
- tons of oyster mushrooms
- 1 TBsp garlic
- 1 tsp chili powder
- 1/2 tsp oregano
- 1/2 tsp cumin
- various toppings, I used mango salsa, cooked black beans, cooked pinto beans in chili sauce with diced tomatoes, and slaw
It’s a pretty easy recipe. First cook the oyster mushrooms in some olive oil with all the spies above. Then line up all your toppings as well as your bowl of oyster mushrooms and assemble in to tacos!
The Veganaut had also been complaining of never having tried plantains. So I threw together some plantain bites on the side that went great with guac.
Mash together three ripe plantains with 2 Tbsp peanut butter, 1 tsp lime juice, 1/4 tsp salt, 1 tsp garlic powder, 1/4 tsp oregano, 1/8 tsp cayenne, and 1/8 tsp allspice. Bake on a pre-greased sheet at 425, 9 minutes each side.
