I wanted to make this recipe for the apple component, and then ended up making a gardein loaf with vegan mashed potatoes and gravy on the side. Very Thanksgiving-esque.
- 8 slices sourdough bread, cut in to cubes
- 2 TBsp olive oil
- 1 package tofurkey italian sausage, cut in to slices
- 1 package white mushrooms, sliced
- 3 TBsp garlic
- 1 bag chopped kale
- 1/2 cup red cooking wine
- 4 gala apples, diced
- 1 TBsp sage powder
- 2 cups veggie broth
- 1 tsp salt
- dash pepper
- 1 bag daiya mozzarella
In the same skillet place the mushrooms and garlic, cook until browned, then mix in the kale and cook until wilted.
Next stir in the cooking wine and apples, then the sage, and cook for about 5 minutes, until the wine is evaporated.
Add the salt and pepper, and then mix in to the large bowl with the sausage and bread cubes. Next mix in the broth and cheese.
Spread over a large casserole dish and cook at 350 for 45 minutes.
