Vegan Apple Quiche

Even though I am getting tired of writing about apple recipes, I am still not tired of eating the leftovers from last month’s foray in to all things apple. Here’s another great one.


  • 2 pre-made pie crusts from freezer section (make sure vegan, some contain lard)
  • 1 chopped white onion
  • 1 chopped package of smart bac’n
  • 1 package broccoli florets
  • 6 gala apples, chopped
  • 1 cup spinach
  • 1 bag daiya cheddar
  • 1 bag daiya mozzarella
  • 1 Tbsp italian herbs
  • 2 containers of firm tofu
  • 1/2 cup nutritional yeast
  • 1/4 tsp tumeric
  • 1 tsp black salt
  • 1 tsp dijon mustardIMG_7269
  • 2 TBsp cornstarch
  • 1/2 cup almond milk

First fry the onion, apples, bacon, and broccoli together over medium heat. Stir in the Italian spices at the last minute.

Combine the tofu, yeast, tumeric, black salt, mustard, cornstarch, and almond milk in a blender and mix until smooth.
In a large bowl combine this tofu mixture with the broccoli mixture and stir in the spinach and cheeses. IMG_7270

Dump these in to the pie crusts.

Bake at 375 for one hour.
