Vegan Apple Pie Cupcakes

Went apple picking as we do every fall, which inevitably means time for apple recipes! Made some great ones this year! This was my favorite so far.


  • 6 peeled and quartered apples

  • 1 cup softened margarine
  • 1 cup vegan soy yogurt
  • 2 TBsp flax seed mixed with 4 Tbsp water
  • 2/3 cup almond milk
  • 2 cups sugar
  • 2 tsp vanilla
  • 3 tsp baking powder
  • 4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 3 cups flour

I used the blendtec blender to quickly chop the apples in to tiny pieces (2-3mm each) by putting in the quarters and pressing the pulse button. IMG_7252

Mix the apple bits with 2 Tbsp margarine, the brown sugar, and 1 tsp cinnamon in a sauce pan until soft, 5-19 minutes over medium heat.

In a large bowl mix together the rest of the margarine, yogurt, flax seed, sugar, and vanilla.

Then stir in the dry ingredients.

In a muffin tin with liners, place 1 Tbsp batter. Then 1 tsp apple mixture, then top with another 1-1.5 Tbsp batter.

Bake at 350 for 19-21 minutes.

Next make the cream cheese frosting:

Use mixers to beat together 1 container vegan cream cheese, 1/2 cup softened margarine, 2 tsp vanilla, 1/2 tsp cinnamon, and 4-5 cups of powdered sugar. Use this to top your cupcakes!
