Vegan Cauliflower Pesto Pasta with Breaded Tofu

This one was actually a little bland to me. But that was one of the reasons the Veganaut and I loved it! We have been on a roll with lots of rich and creamy, overwhelming your taste bud meals, so this was a bit more simple yet equally enjoyable for a change.

Ingredients:

  • one package linguineIMG_7079
  • 1 head of cauliflower, chopped
  • 1 package of extra firm tofu, drained and chopped
  • panko breadcrumbs
  • olive oil
  • soy sauce
  • your favorite recipe for vegan pesto (I used a basil one)

Take the linguine in a large pot of water and bring to a boil. After boiling add in the cauliflower and let cook together for 8-10 minutes. Drain.

Mix he pasta and cauliflower in to your pesto.

To make the tofu: soak the cubes in soy sauce first, then dip in the breadcrumbs, then fry in olive oil over medium heat for 5-6 minutes. IMG_7077

I also made bruschetta: there are hundreds of recipes on line, mine just involved dicing four tomatoes, chopping one bushel of basil, and mixing in salt, pepper, and some olive oil. Serve on toasted bread, top with a balsamic vinaigrette sauce.
