Savory Vegan Bread Pudding

You remember those breakfast bread bowls I posted earlier this week? Well I had the innards of four large bread bowls and had to find something to do with them!


  • your leftover bread
  • 1 bag cremini mushrooms
  • 1 container baby kale
  • olive oil
  • 2 TBsp garlic
  • salt and pepper
  • 1.5-2 cups almond milk
  • 2 cups vegan mozzarella cheese
  • 1 tsp thyme
  • 1 package of spinach sausage by Tofurky

Fry up the mushrooms in the olive oil with the garlic and thyme over medium heat. Add the sliced vegan sausage and fry until that is brown. Once the mushrooms are softened add the kale and wilt in. Once this is all cooked mix it in a large bowl with the cheese and bread. Transfer to a casserole dish and add the almond milk, stirring in, making the bread sticky and soggy.

Bake at 350 for 20 minutes!
