Vegan Broccoli and Pine Nut Calzones

Another delicious one here, the innards were enough to make two giant calzones.

Ingredients:IMG_6428

  • two pizza doughs
  • 1 bag broccoli florets, steamed
  • 1/2 cup pine nuts
  • 1 can drained olives
  • 1 cup vegan ricotta
  • 1/2 cup daiya mozzarella
  • 1/2 cup daiya cheddar
  • 1/4 cup vegan parmesan

First mix all the ingredients aside from the pizza dough and daiya in a large bowl. Dash with some salt and pepper.

Then roll out your dough and top it with these ingredients. Top this with the day. Close in to a calzone, put some slices in the top, and bake at 450 for 15-20 minutes. IMG_6429

Best served with a side of marinara. IMG_6431
