Vegan Orange Tofu with Spinach

This was a super easy lunch time recipe.

Ingredients:

  • 1 bag spinach
  • 1 container fried tofu (I bought pre-fried from the asian food store)
  • 1/2 cup orange juice
  • 2 TBsp sriracha
  • 3 TBsp sugar
  • 1 TBsp cornstarch
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp rice wine vinegar
  • 3 TBsp soy sauce
  • 1 TBsp sesame seeds

Whisk together all the ingredients above from orange juice down- that is your sauce.IMG_6392

In a large wok wilt the spinach in a small amount of grapeseed oil, then add the tofu and sauce, cooking on medium heat for 4-5 minutes.

Serve over rice.

I also made some pre-made veggie spring rolls to serve on the side.
