Mushrooms, Broccoli, and CousCous

So many of my meals are rich and full of fake meat, cheese substitutes, or something making them rich and savory. I like it that way. But sometimes it is nice to have a break from that and have a light and refreshing meals. This was one of those.


  • 1 box of couscous mix (I used a premade mixture from TJs that had some lentils in it too)IMG_6292
  • 3-4 cups of exotic mushrooms of your choice
  • 1 bag of thawed broccoli
  • olive oil
  • 2 TBsp soy sauce
  • 2 TBsp garlic
  • 1 tsp mexican mole spice mixture
  • 2 TBsp mirin

In a large wok heat the olive oil and cook the mushrooms for a couple minutes on medium, then add the soy sauce and lower to low heat and cook for 5-6 minutes. Then add the spices, garlic, broccoli, and mirin and cook another 4-5 minutes. Serve over couscous.
