Potato Tacos

Two varieties for tonight’s meal, because I love sweet potatoes and the Veganaut loves regular potatoes I made a version of each.


  • 2 sweet potatoesIMG_6118
  • 2 white potatoes
  • 2 cans black beans
  • 2 tsp cumin
  • 2 tsp cinnamon
  • dash salt and pepper
  • toppings of your preference!

Dice the potatoes. Spread out on a greased baking sheet. Bake at 400 for 10 minutes, then flip over and bake another 10 minutes. Then mix in one can of rinsed black beans per sheet and dust with half the spices each and bake another 5 minutes. IMG_6117

Then use a spatula to to scoop in to your taco shells and serve with any variety of toppings you like. I used salsa, avocado, and cashew sour cream.
