Vegan Spicy Shrimp Pasta

Had some random vegan shrimp in the freezer I wanted to use up, and was pleasantly surprised with this recipe I made up. Just the right amount of spice.

Ingredients:

  • 1 box linguineIMG_5834
  • 2 TBsp margarine
  • 1 container of vegan shrimp
  • 1 TBsp olive oil
  • 2 TBsp creole seasoning
  • 1 tsp salt
  • 2 TBsp garlic
  • 2 TBsp chopped jalapenos
  • 1 chopped yellow onion
  • 1 container of vegan soy creamer
  • 1 container of grape tomatoes, haled
  • 1 cup daiya pepperjack cheese
  • 1 TBsp dried parsley
  • 1 TBsp dried basil
  • 2 cups frozen peas
  • 1/4-1/2 cup soy milk
  • 4-8TBsp flour
  • 1/4 cup vegan parmesan

So this one is a little elaborate. Start boiling the linguine, butIMG_5835 meanwhile work on the rest of the dish. Add the olive oil and margarine to a pot, and the vegan fake shrimp. Cook on medium for 4-5 minutes, add half the creole seasoning, then remove from heat and set aside, but leave the oil/margarine in the pot.

Add the onions, jalapeños, and garlic to the pan instead, and cook for 3-4 minutes. Then add the remaining creole seasoning, and the entire container of soy creamer, as well as salt. Next I decided to thicken it, so I added 4 IMG_5836Tbsp flour, but it was too chunky, so I added 1/4 cup soy milk, and then it was too thin again, so it ended up being a back and forth of flour and soy milk in Tbsp until it seemed just right. Once it was the right thickness I added the peas and cooked another 5 minutes.

Just before removing it from heat I added all the remaining ingredients. I mixed this whole thing in with the cooked pasta. I also served it with a side of bread with olive oil. And goes lovely with some sangria. 21
