Vegan Bolognese

Loved this recipe! Super packed with veggies and deliciousness.

  • 1 package spaghettiIMG_5797
  • olive oil
  • 3 TBsp garlic
  • 1 package cremini mushrooms
  • 1 package Italian tofurkey sausage, diced
  • 1 carrot, peeled and diced
  • 1 package spinach
  • 1/4 cup red wine
  • 1 package of tempeh crumbled
  • 1 tsp margarine
  • 1 jar marinara sauce
  • 1 TBsp dried basil
  • 1 TBsp dried parsley
  • 1 tsp oregano
  • 1 tsp rosemaryIMG_5798
  • 1/4 tsp red pepper flakes

Start boiling the pasta according to the instructions.

In a cast iron skillet over medium heat add some olive oil with the garlic, sausage, mushrooms, and tempeh and fry for a couple minutes. Then add the red wine and margarine, and then spinach, wilting it in, as well as a little salt and pepper. Cook another couple minutes then add the carrot, basil, and parsley. Cook until soft, about ten minutes. Add all the remaining ingredients and stir, cooking another 5-6 minutes.IMG_5800

Serve over pasta!
