Pomegranate and Pistachio Relish

I am a huge fan of avocado, everyone knows that. And a simple recipe I like to make for breakfast is avocado spread out on toast, maybe with some hot sauce. But I recently came across a recipe for Pomegranate and Pistachio Relish on avocado toast, so I modified it and it was phenomenal!

Ingredients:

  • 2 cups pistachios (roasted and de-shelled, mine were from TJs)
  • 2 cups pomegranate seedsIMG_5747
  • 2 TBsp dried parsley
  • 1 TBsp garlic
  • 1/2 cup red onion, diced
  • 1/4 cup olive oil
  • 2 TBsp agave
  • 1/2 tsp allspice
  • 1 Tbsp apple cider vinegar

Mix all these things together and that’s it! It goes great in a salad, or for me I spread it out on some english muffins that already had avocado on them.
