Broccolini-Sausage Pasta

Another simple pasta recipe, though I admit I made this one and served it with an incredible stuffed bread, but you’ll have to come back tomorrow for that recipe. IMG_5444


  • one container of funky pastaIMG_5442
  • 1 package tofurkey italian sausage
  • 2 packages broccolini
  • 2 TBsp garlic
  • 2 TBsp margarine
  • 1 tsp red pepper flakes
  • olive oil
  • salt and pepper

Start cooking your pasta as per the package. In a cast iron skillet cook your sausage in a little olive oil. Remove and then add the garlic and broccolini, as well as enough water to coat the bottom surface of the pan. Cook until tender, then add the margarine and sausage back to the skillet. Season with the salt, pepper, and red pepper flakes. Remove and stir in to the cooked pasta in a large bowl.

When I packaged this for leftovers I also added a bit of marinara on top, but served as a side to the mushroom stuffed bread it worked well like this.
