Back To Basics This Week: Pasta Primevera

Here is another super simple recipe made in bulk for leftovers.



  • 2 boxes tri-color rotini
  • 1 container cherry tomatoes
  • 1 jar marinara sauceIMG_5494
  • 1 package crimini mushrooms
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 bag frozen peas
  • 1 bag frozen broccoli
  • 2 Tbsp Italian seasoning
  • 1/2 cup daiya mozzarella
  • 2 TBsp dried garlic chunks
  • olive oil

Pre-heat the oven to 400. Make sure your peas and broccoli are thawed first. In a large casserole dish spread the mushrooms, bell peppers, and broccoli with olive oil. Cook for 15 minutes, turning half way through. Then add the peas, tomatoes, Italian seasoning, and garlic chunks in to this dish. Stir first to coat with olive oil and cook another 5-7 minutes.

Meanwhile cook your pasta. Once the pasta is cooked, use a large bowl to mix all the veggies, pasta, and remaining ingredients (marinara and cheese). This made like 14 containers of leftovers, which was great for a long couple work weeks.
