Vegan Peanut Butter Pretzel Brownies

This is one of those meals that can easily be classified as “too much good”. Seriously, it is orgasmic. And not healthy despite the vegan status.

Ingredients:

  • your own homemade chocolate covered pretzels (I have published a couple posts with them in the past)IMG_5356
  • 2 cups peanut butter
  • 2 sticks margarine
  • 3-4 cups powdered sugar
  • 1/2 cup almond milk
  • two boxes of vegan brownie mix

Ok, the easiest part of this recipe is first making the vegan brownies, but probably the toughest part is finding a vegan box mix. There are a couple that I have found, one at Whole Foods and one in Safeway. Of course they call for added eggs, but I use flaxseed powder instead.

Once your brownies are mixed up and in the oven (since I used two boxes I used a large casserole dish to cook them in).

While the brownies are cooking you can make your chocolate covered pretzels and put them in the fridge to cool.

Once the brownies are done let them cool for at least three hours. Then make the peanut butter topping: whip together the peanut butter, melted margarine, almond milk, and powder sugar. Top the brownies with this, then the pretzels on top of this. The best way to eat this is in TINY pieces, I think the entire container made at least 2 dozen small brownies for us, cause each bite is packed with tons of goodness.
