Yup, you heard right. This was AMAZING in so many ways, mouth watering, filling, and savory.
Basically I assembled all the ingredients ahead of time for putting together the burrito.
First I spread some vegan mayo on the tortilla, then topped this with butter lettuce and sliced grape tomatoes.
To make the avocado, I whisked together 2 cups of flour, 1 tsp salt, and 1 tsp garlic powder. Then I added one bottle of beer of your choice to this, stirred it up until it was a batter.
Next slice up two avocados, and dip them completely in the batter. Then fry in a small pot with oil, probably 2-3 inches deep.
Top your burrito with these, and lastly some corn salsa and then dressing of your choice. I spread some BBQ sauce on mine naturally.
Not wanting to waste the left over batter or oil, I sliced up a block of tofu and fried that too. Then I chopped up the tofu and used it as the meat in some salads for the week.
