Vegan One Pot Pasta

This was a super fun recipe I modified from a Huffington Post blogger to make vegan.

 Basically I took one box linguine, 1 container of grape tomatoes cut in half, 1 bushel photo 1of basil leaves, 3 TBsp garlic, and 1 container of tofurkey sausage sliced in to thin slices and dump them in a large pot. Then add 4.5 cups of water. Bring to a boil, then return to simmer, add 2 TBsp olive oil and some salt, and cook on simmer until all the water absorbs in to the dish. Mixed 1/2 cup vegan parmesan with it when done!

I also served it with garlic bread on the side. Loved it! Perfect with a nice glass of red!
